A basic cold sauce of egg and oil often served with cold dishes.

Mayonnaise is a cold sauce made of egg yolk and oil. As such it's an extremely rich sauce the problem with making mayonnaise is that they are difficuly to blend together and will try to separate. It's easy enough to avoid but needs to be done by ensuring the ingredients are at the same temperature and adding the oil very slowly. If it separates the mixture can be added slowly to another egg yolk to rectify that.

Mayonnaise can be made plain of flavoured with pepper, garlic, mustard, vinegar or salt. Many authors seem to suggest that the addition of another ingredient is necessary to make mayonnaise successfully but the main reason to add another ingredient is that people seem to prefer mayonnaise with a little flavouring.
