We want slow food and we want it now!

How long do you take to eat a meal? Half an hour? How long do you take to digest your meal? 6 hours 12 hours? How long does it take to grow the food? A year?

Then for heaven's why on earth are we told how easy and quick it should be to cook? What's wrong with putting an chair and a good book in the kitchen and taking three chapters to slow cook something. Shove two chairs in there and share a glass or two with your significant other while you spend a couple of hours talking to each other. Don't worry about the food it can stew in its own time. It's all very well for Jamie's latest book to tell you that you can prepare a three course meal in 30 seconds and to spend a few hundred on ready meals and high powered microwaves but unless you want a freezer full of E numbers and a kitchen that is completely inaccessible because it's been buried under overpriced electrical tat then is that really a good choice?

Ranting aside what is wrong with simple cheap food cooked slowly. There is no need to spend a fortune on exotic ingredients and expensive cust of meat and the trick to it is that all you have to do is realise that the only reason high speed cooking of expensive things in expensive kit is necessary is because we're all working too damned long to have the time to do anything else and the only reason we're all working too damned long to do anything else is because we insist on buying expensive ingredients and overpriced kitchen equipment.

So here's a suggestion. Make a mediterranean sauce, chopped tomatoes, onions and garlic as a base and suitable cheap vegetables on top of that, mushrooms, peppers, courgettes whatever that should cost no more than a few pounds for a ludicrously large pot of the stuff which you can leave to simmer for ages. Add company and a bottle of wine and for once just wait; there's no rush and there's no schedule when eventually you want to eat add a little pasta and a little parmesan. How much do you make? well a stonking great pot. Now you can do quick meals because the rest of that pot can go into the freezer on two and four person portions to be pulled out when you really do need a quick meal. Pull it out in the morning and buy the time it's dinner time it will be defrosted and only take a few minutes on the hob to warm through.
